'Vegan Dishes 365 With Daniela': Stuffed Cantaloupe Is Perfect Portable And Refreshing Summer Beach Snack! (RECIPE & VIDEO)

Ingredients:

Salad:

• 1 cantaloupe
• 1/3 pre-cooked soba noodles
• 3/4 julienne zucchini
• 1 small endive
• 4 pieces snow peas
• 1 small nectarine
• 2 tablespoon toasted pine nuts.

Dressing:

• 1/3 olive oil
• 1 oz. fresh lemon juice
• 1 tablespoon tahini
• 2 teaspoon nutritional yeast

Directions: Thin slice the snow peas and endive and fine dice the nectarine. In a bowl, add the pre-cooked soba noodles and julienne zucchini and mix in the snow peas, endive and nectarine.

In a separate bowl, add all the dressing ingredients and stir until the mixture is homogeneous. Pour it on the top of the salad and mix.

Wash the outside of the cantaloupe; then slice it in half and scoop out the seeds and some of the inside with a spoon. Set aside.

Fill cantaloupe halves with salad and sprinkle with toasted pine nuts.

After moving to Los Angeles in 2010 and discovering the Hollywood vegan lifestyle, Daniela incorporated much of what she learned back home into dishes she cooks for her vegan friends.
