National Cheese Lovers Day Is Jan. 20 (RECIPES, VIDEO)

There's nothing quite as wonderful as cheese. It comes in literally thousands of forms, which means that no matter what your preference, you should probably be celebrating cheese today, National Cheese Lovers Day. It can be gooey and oozy like a good brie or camembert. It can be stringy and stretchy like melted mozzarella or fontina. It can be hard and crumbly like old cheddar, or rock-solid and rich in umami like parmigiano-reggiano. It can be briny like feta, soft and light like burratta, light yellow like tomme or bright orange like Red Leicester.

The most glorious way to celebrate cheese is a simple but elegant cheese board, accompanied by olives, figs or grapes, pickles, olive oil and a warm baguette.
