National Pi Day: Celebrate With These 5 Delicious Spring Time Pies

March 14 is National Pi Day (3.14)! Pi Day was founded in 1988 by physicist Larry Shaw and in 2009, March 14 was declared to be National Pi Day to celebrate math, science and education, but for those of you who are not great at math and are better at eating, then these five pie recipes are perfect!

Over the weekend we all lost an hour of sleep when we turned the clocks forward an hour. This usually means the start of spring and longer days, so why not combine Pi Day and the start of spring together with some spring-themed pies? In season during the months of spring are strawberries, apricots, rhubarb, limes and pineapples. These five perfectly celebrate the ingredients in season for National Pi Day!

1. Roasted Apricot Custard Pie

This cool and creamy pineapple pie will have you thinking you have been transported to the islands. This pie is like a pineapple version of a lemon meringue and uses simple, everyday ingredients that anyone can find at the local grocery store.
