Weekends are wonderful, but so often they mean scrounging for the last vestiges of food left in your fridge. Weekends are also the perfect time to go out for breakfast, brunch, lunch or dinner - or all four - but restaurants often end up breaking the bank. However, if you plan ahead and make yourself hit the grocery store on the way home from work on Friday, you'll eat like a royal all weekend without having to tip anyone.
Here's a breakfast, lunch and dinner recipe for each day of the weekend. Pick what you want to eat this weekend and shop accordingly. You'll thank us on Monday!
Saturday
Breakfast: Oven-Roasted Breakfast Potatoes from The Chunky Chef. Pair these with some scrambled eggs and a breakfast sausage or two and you won't miss the diner for a minute.
Lunch: Kimchi Fried Rice from Rasa Malaysia. This recipe makes incredible rice that's packed with flavor with pieces of kimchi throughout and all the savory, spicy and bright flavors of Korean cuisine. You can make it with brown rice too, it works just as well, and it'll be a more filling, healthier meal.
Dinner: Corned Beef Grilled Cheese from Spicy Southern Kitchen. This is a very decadent dinner, so serve it with white wine to cut the fat and make a big arugula salad with a great dressing to balance it out.
Sunday
Breakfast: Julia Child's Hollandaise Sauce from Food.com. Make some fried eggs and toast and drizzle the Hollandaise on liberally. Poached eggs are delicious, but if you want easy, at-home brunch, put your focus on the Hollandaise and pair it with some over-easies instead. If you want to be fancy without putting too much extra Sunday-morning effort in, saute some spinach with some butter and garlic and boom, you've got at-home eggs Florentine.
Lunch: Avocado Chicken Salad from Never Skip Dessert. Make a big bowl of this stuff and scoop it onto a salad with spinach and your favorite veggies, and drizzle with a little extra dressing if you're so inclined. Serve with pita chips.
Dinner: Eggplant Parmesan from Table for Two. This vegetarian-friendly layered dish is cheesy, tomato-y and fantastic served over pasta or by itself. A glass of red wine to toast the end of the weekend doesn't hurt either.
